E2E tests infrastructure needs to have all the needed PHP extensions to run

Composer 2 has a runtime check to make sure all the extensions are correctly loaded. Some parts of the infrastructure did not have all the required elements and some were outdated (e.g. PHP Redis 4 vs PHP Redis 5).
