You can see the difference when interacting with a remote with GIT_TRACE_PACKET enabled. For example: GIT_TRACE_PACKET=1 git -c protocol.version=2 fetch --no-tags <remote> <branch_name> GIT_TRACE_PACKET=1 git -c protocol.version=0 fetch --no-tags <remote> <branch_name> Note that modern(ish) version of Git will try to use the protocol version 2 by default.
