    Make sure we always use the `docker-compose` provided by the `nix-shell` env

    For someone trying to start the dev stack with make start SUDO=sudo we want to make sure the docker-compose used is the one provided by the Nix environment. Currently if you use nix-shell directly it will fallback to the docker-compose CLI provided by the system.
